I turned out really good - very cheesy and saucy (I left a fair amount of pasta water in the pot after draining), and a bit salty (I salted the pasta water before cooking the pasta). I substituted Parmigiano-Reggiano for the Gruyère cheese and pepperoni for the ham. Here is a version I just made using what I had available in the fridge.

Gluten free doesn’t have to mean “taste free”. This is definitely not your traditional “boxed” mac and cheese and it most definitely leaves any of the gluten free versions out there in the dust. When butter is melted and mixture is hot and steaming, turn the heat down to medium-low and add about a quarter of the cheese. Earlier this week, I found out that Velveeta (at least the original one) is gluten free and I couldn’t wait to use it again. In a large pot over medium heat, melt butter with evaporated milk. I don’t think that anyone ever told me that it wasn’t gluten free or anything I probably just assumed. I have made this tasty Macaroni and Cheese for well over 20 years except the last few (since I thought that Velveeta wasn’t gluten free).
